Preparation involved halving a baguette lengthwise. Mincing garlic, coring and dicing 2 Roma tomatoes. Chopping fresh basil. Drying raw shrimp, and seasoning it with parmesan, and pepper. The preparation was relatively easy and quick but it was messy.
Garlic bread was prepared by topping it with olive oil, garlic, and parmesan cheese. The baguette halves were placed in the oven until they were golden brown. The pre-measured pasta was prepared and set aside. A 1/4 cup of pasta water was reserved for the Pomodoro sauce.
Shrimp was sauteed in a non-stick pan until browned and set aside. The Pomodoro sauce was prepared in the same pan used to cook the shrimp. The sauce was simple and consisted of olive oil, garlic, pre-measured oregano, pasta water, chopped Roma tomatoes, butter, and fresh basil. The Pomodoro sauce was mixed into the cooked pasta and garnished with basil. The garlic bread was served on the side.

This recipe was straightforward and easy to follow. The recipe estimated that it would take 2-3 minutes per side for the shrimp to cook evenly. I found that I needed to cook the shrimp slightly longer to get to the browning point.

My family and I enjoyed this meal. I usually find that pasta dishes tend to be somewhat on the heavier side, and this dish was lighter without compromising on flavor. The garlic, basil, tomato, and butter blended very nicely together in this dish. Although there was a slight coating of parmesan on the shrimp, I didn't miss the absence of cheese on the pasta itself. I'm the type of person, that usually needs a lot of cheese to thoroughly enjoy a pasta, however, the Pomodoro sauce really held its own. The portions were just right, and my husband and I felt satisfied after finishing our meal.
